
Cacao & Matcha Cookies
I love this guilt-free treat! The bananas and dates provide sweetness whilst the cacao, matcha and almond meal pack a super-nutritious punch! Great for a mid-afternoon pick-me-up or a post meal sweet-hit.
Ingredients
• 8 pitted medjool dates
• 2 chopped large bananas
• 65g raw cacao
• 1 tsp matcha powder or d.e.w Matcha & Mint blend
• 175g almond meal
• 60ml mild extra virgin olive oil
• 2 tsp vanilla extract
• 50ml maple syrup
Preheat your oven to 180° (160° fan forced). Line a 20 x 20cm cake tin with baking paper. Place all ingredients into a blender & whizz until well combined.
Pour into the tin & spread evenly with a spatula. Bake for 20 mins or until just firm around the edges. Allow to cool for 20 mins & then pop it in the fridge until chilled. Turn out onto a chopping board & with a sharp knife cut into cute little squares.
