Gluten Free Apple Crumble

So delicious and nutritious I sometimes eat the leftovers for breakfast!!

Preparation time: 45 minutes
Serves: 4

Ingredients

  • 6 organic apples – cut roughly with skin on
  • Dash cinnamon
  • 1/2 cup Buckwheat flakes
  • 1/2 cup Quinoa flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup crushed walnuts (optional)
  • 1 vanilla pod (optional)
  • 1/4 cup Brown Rice Syrup
  • 1/3 cup coconut oil
  • Approx. 1/4 cup boiling water

Method

Add the chopped apples with the dash of cinnamon to a saucepan. Fill with water until apples are just covered. Bring to the boil then reduce to a simmer for 15-20 minutes or until soft. Drain and pour into an oven-proof dish. Heat oven to 175c.

In a separate bowl mix together Buckwheat, Millet, seeds and vanilla. Heat the Brown Rice Syrup and coconut oil in a saucepan until melted, then add to the grain and seed mix. Add sufficient water so mixture becomes moist. Pour over the apples and bake for 30 minutes, or until crumble is golden.

Serve with your choice of good quality yoghurt. My choice is Coyo Coconut Yoghurt.

Feel free to experiment – substituting apples for your favourite stewed fruit (rhubarb or peaches, depending on the season!)  Enjoy!
