Leek & Matcha Soup

Leek & Matcha Soup

Quick and easy to make, yet delicious and highly nutritious! High in polyphenols, fibre, good fat and antioxidants. Can also be served cold (so don’t throw out the leftovers!)

Ingredients

  • 1 tsp butter or olive oil

  • 1/2 washed and chopped leek

  • 1 cup veggie stock

  • 1 tbsp chopped mint

  • 1 tsp matcha powder

  • 2 tbsp cream or cashew cream

Method

Saute the leek in a pan with the butter or oil.

Once softened add the stock, mint and matcha powder and heat through. Pour in the cream and blitz with a blender, then serve and season with salt & pepper as desired.

Serves 1.
