Turmeric Cauliflower & Chickpea Salad
Such a simple dish yet incredibly healthy (full of fibre and anti-inflammatory goodness) and filling! I like to keep a little aside undressed for lunches throughout the week.
- 1 cup cooked chickpeas
- ½ head of cauliflower
- 1 tsp olive oil
- 1 cup chopped tomatoes
- 1 tsp turmeric OR my d.e.w turmeric & ginger blend
- ½ cup chopped parsley
- ¼ cup chopped mint
- ½ cup pomegranate (optional)
- 1 chicken breast (optional)
- Black pepper to taste
Dressing
- 1/4 cup Organic Extra Virgin Olive Oil
- 1 tbl sp. organic Apple Cider Vinegar
Preheat your oven to 180° (160° fan forced). Chop the cauliflower into small pieces and mix together with the olive oil and Turmeric & Ginger blend. Bake in the oven for 10-15 minutes, being mindful not to burn. This dish is wonderful on its own but if you would like to add the chicken, simply grill or lightly pan-fry the chicken breast with a little olive oil until cooked.
Mix all remaining ingredients together in a large bowl. Add the baked cauliflower and top with the dressing and grilled chicken (if desired). Pepper to taste.
